Soba made in the nihachi ratio, cut fresh each day using Edo-period technique, is the point of this quiet Seoul noodle shop. The chef spent years studying the craft with one goal: to make soba that doesn't ask you to lower your standards for geography. Zaru soba is the purest test of that, though the duck and green onion bowl has its loyalists. The Michelin Guide awarded a Bib Gourmand. Foot-kneaded udon rounds out the menu for anyone hedging.
