The tonkotsu broth here is pork-forward but never heavy, which sounds like a small thing until you've slogged through a bowl that coats your throat like spackling compound. This Tokyo-based ramen shop in Midtown pulls its noodles in-house, and they hold their spring all the way to the bottom of the bowl. The Michelin Guide awarded it a Bib Gourmand. The room is sleek enough for a working lunch and relaxed enough for a slow dinner.
