Chikuyuan Taro no Atsumori
Noodles
A sign at this old-school Kyoto soba shop declares that soba is medicine, and the kitchen takes that seriously enough to frame the whole menu around yakuzen, the idea of food as remedy. The noodles are buckwheat-dark and earthy, and the Atsumori-soba arrives straight from the pot, kept warm over a bamboo steamer, with hot dipping sauce loaded with Kujo green onion, egg, and wasabi. The Michelin Guide awarded it a Bib Gourmand.
