A Michelin-starred kaiseki restaurant in the heart of Gion, where the menu is essentially a calendar written in food. The chef works from the idea that a year has 72 micro-seasons, each just a few weeks long, and the kitchen takes that seriously enough that what arrives at the table shifts with the week, not the month.
