A sunken hearth dominates the room at this intimate Gion restaurant, where the whole philosophy is encoded in the name: "manma" means "just as it is." The chef trained to respect ingredients first and has carried that forward into a menu that follows the seasons, duck in winter giving way to sweetfish in summer, all cooked over charcoal with no fuss applied. Evenings allow some choice from the menu, which guests tend to appreciate.
