Everything on the menu, fish and meat alike, goes over charcoal, which keeps the focus admirably narrow for a steakhouse with this much real estate. The dry-aged cuts and the house rump cap are the main event, though a slow-cooked Uruguayan lamb shoulder with its own jus makes a reasonable argument for itself. Exposed stone, leather sofas, and a basement wine cellar holding over 400 labels round out the rustic-elegant affect.
