A planet-shaped artwork hangs in the dining room, and if you look closely it resolves into images of food layered into a map of the Earth, which tells you exactly what kind of restaurant this is going to be. Chef Hajime Yoneda runs a three-Michelin-star tasting menu built around a single theme, "Dialogue with the Earth," with the precision you'd expect from someone who trained as a systems engineer before turning to a stove.
