Now it's an intimate restaurant in rural Leicestershire, running a seasonally driven tasting menu of ambitious, layered dishes. The beef Wellington arrives whole and gets sliced tableside, which sounds fussy but lands as genuine theatre. Boutique rooms are available if you'd rather not navigate country lanes afterward.
