    Lobster with béarnaise spiked with kruškovac (the Croatian pear brandy) tells you exactly where you are: not quite Italy, not quite Istria, but somewhere between them. This Michelin-starred fine dining restaurant inside a five-star hotel takes its cues from a two-starred sister in Trieste, with local chef Goran Hrastovčak running the kitchen. Tasting menus or à la carte, the plates arrive with the kind of color and composure that make a terrace aperitif feel like a reasonable warmup.
