    The rum baba at this Hotel Beaumont brasserie is the kind of thing that makes you reconsider your evening plans. French in spirit and generous in portion, the menu moves comfortably between classic brasserie cooking and vegetarian options without making a fuss about either. Lunch and dinner, seven days, with a crowd that skews cosmopolitan in the way Maastricht tends to. The Founders Bar across the hall is the obvious next move.
