    Aperitifs in the lounge before moving to the dining room overlooking the Maas River, that's the rhythm here, and it sets the pace well. This Michelin-starred restaurant in Maastricht builds around a chef with a genuine obsession: Asian textures and techniques folded into luxury European ingredients, caviar and truffle sitting alongside Limburg-grown vegetables. The whole thing is polished enough that the ambition rarely shows, which is the trick.
