Japanese
A lantern painted with the hiragana for "eel" marks this old-school unagi house, which has been grilling over charcoal since the days of the shogunate. The sixth-generation chef keeps the Edo-style tradition intact, brushing eel with a tare sauce that has never really been updated. Skewers of liver, rib, and fin arrive while you wait for the lacquered box of broiled eel over rice. The Michelin Guide awards it a Bib Gourmand.
