A vaulted 16th-century stone room at the foot of Cathédrale St Front, named for a fictional Belgian detective with impeccable taste in order and method. This is a proper sit-down restaurant, the kind where the chef takes Dordogne terroir seriously, reworking regional classics, foie gras, magret, tarte Tatin, with a light contemporary hand. The service is warm rather than stiff, which in a room this old is its own small achievement.
