Seventeen rooms tucked in the literal shadow of Carcassonne's medieval walls, which is either the most obvious place to put a luxury hotel or proof that someone had the good sense to plant one where it belongs. The family-run setup means small and personal, the rooms lean dramatically into the setting, and the spa earns its space. No restaurant, but the terrace bar faces the castle, which makes the light bites entirely beside the point.
