Stained-glass windows and coats of arms overhead, ramparts just outside: La Barbacane is a formal dining room inside a neo-Gothic hotel that takes its setting completely seriously. The kitchen leans Mediterranean, with fish and seafood doing most of the work, then game and mushrooms arriving when the season calls for them. Classical Languedoc cooking, updated rather than reinvented, served to people who dressed for dinner and meant it.
