    The stone interior walls were designed to evoke cenotes, which tells you something about how seriously chef Roberto Solís takes total immersion in Yucatán. This is a 16-seat tasting menu restaurant, so dress accordingly. Solís, who cooked at Per Se and Narisawa before returning home, built the movement known as nueva cocina yucateca, and Huniik is where it reaches its most considered form. It holds a spot on the World's 50 Best list.
