This is a fine dining room tucked into a hotel off Piazza della Repubblica, where the chef's years cooking in three-starred kitchens around the world show up in dishes that use heat and spice with unusual precision. It holds a Michelin star, and the soft-lit, travertine-framed setting makes sure you feel every bit of that.
