A 17th-century hospital turned luxury hotel is a concept that could go very wrong, but the bones here are extraordinary and the interiors by Jean-Philippe Nuel keep up their end of the bargain. Rooms are spacious and well-equipped, the location just above the Old Port gives you both history and convenience, and there's a Clarins spa with two pools when you need to recover from all that sightseeing. The outdoor terrace alone earns its keep.
