José María
Castilian Spanish
An old-school Castilian asador that raises its own suckling pig on a family farm and then roasts it the traditional way, which tells you more about the kitchen's priorities than any menu description could. Seasonal game, leeks, and pumpkin fill out the à la carte, and the Ribera del Duero wine list leans heavily on Pago de Carraovejas. The room is bigger and more handsome than the street outside would suggest.
