    The chef works behind a wooden counter of exposed stone in a restored village building in the Luberon, visible to every table seated on handcrafted walnut furniture. This is a Michelin-starred modern French restaurant running a single carte blanche menu that shifts daily with the season. Sourcing is hyperlocal and obsessive, and the cooking leans delicate and herb-bright. The cheese course happens in a cavernous 13th-century vaulted cellar, which is a hard act to follow.
