JUEUN
Korean
Fermented sauces, built in-house and changed with the seasons, do most of the heavy lifting at this Michelin-starred Korean tasting menu restaurant on the eighth floor of Gyeonghuidang. The courses follow a quiet, classical arc and close with a traditional Korean spread that arrives like a small banquet. Ceramics from local artists line the room, and the drinks pairing leans on traditional Korean spirits alongside wine, which makes the closing toast feel considered rather than obligatory.
