Yim Jung-sik, who runs this two-Michelin-star contemporary Korean restaurant alongside his New York outpost, built a reputation by taking the familiar, gimbap, bibimbap, the full banchan spread, and pushing it somewhere unexpected without losing the thread back to the original. A set menu with optional supplementary courses keeps things refined, and the wine pairings are thought through rather than just present. Gangnam, dressy, and not cheap.
