    The Dolhareubang dessert, a miniature Jeju Island stone figure set in a traditional garden of toasted rice ice cream and black bean mousse, tells you exactly where you are: a tasting menu restaurant where Korean culinary tradition gets remade from the ground up. The Tribeca dining room is muted and minimal, which lets the nine courses do the talking. Three Michelin stars, a James Beard Award for Outstanding Chef, and a spot on North America's 50 Best.
