The chef runs an authentic Japanese kitchen, building multi-course kaiseki menus around carefully sourced fish, wagyu, and shellfish. At lunch the format relaxes into something lighter. The terrace in warm months is the room everyone actually wants, even if the interior makes a convincing argument on its own.
