1. Karai by Mitsuharu

    Nikkei cuisine done with serious intent, sitting on the fourth floor of the W Hotel in Las Condes. Mitsuharu Tsumura, the chef behind Lima's Maido, brought his Peruvian-Japanese vision here and translated it through Chilean seafood and local ingredients. The room is small and calm, counter seats put the kitchen on full display, and the crowd leans dressed-up and curious. It earned a spot on Latin America's 50 Best for good reason.
