A short walk from Vitoria's old town, Karmine is a modern tasting menu restaurant where the chef has made a project of rescuing forgotten Álava recipes and near-extinct local ingredients, filtered through his mother's Valencian roots. The menu, eight or ten courses, changes constantly through close work with local farmers. The wine list leans hard into the region, and the team will happily steer you through it.
