The chef does his farm rounds every morning before the menu exists, which is to say the menu is whatever Izmir's season hands him that day. This old house in Alsancak, with its high ceilings and no-frills atmosphere, runs a set surprise menu of traditional Turkish cooking, earning a Michelin Bib Gourmand along the way. Locals fill it daily and rarely seem to consult a menu, because there isn't one to consult.
