    Deep crimson walls, arched headboards, and velvet accents give this central Saigon hotel the moody atmosphere of a good bottle of red, which is precisely the inspiration. It sits a few minutes from Notre Dame Cathedral, with a private onsen available as a wellness add-on, a rooftop cocktail bar named for drifting, and a restaurant leaning toward lighter, wellness-minded plates. Not your average Ho Chi Minh City bolthole.
