    A traditional Korean twisted doughnut, reimagined in feather-light brioche with sesame butter and ginseng honey, gives you the measure of what Koan is doing. This is a multi-course tasting menu restaurant where Korean heritage and technique quietly run everything, even when the result looks entirely European. The cooking holds two Michelin stars, and the service is polished without feeling stiff, which at this level is harder than it sounds.
