Kyogoku Kaneyo

An eel restaurant that's been around forever, Kyogoku Kaneyo is most famous for its Kinshi Don, a bowl of rice lacquered in house dipping sauce and crowned with Edo-style grilled eel and a billowy Kyoto omelette. The sauce is the same recipe the founders used, and the Kanto steaming-then-grilling technique came from a Tokyo cook they brought in generations ago. East meets west, and the bowl holds the evidence.
