    French, Western

    A one-Michelin-star French restaurant tucked into a Nihombashi basement, where the name means peace and the cooking takes that seriously. The chef leans on Japanese farmers for peaches, sweetfish, and chestnuts, and keeps the sauces light enough that you can actually taste them. It's French technique in Japanese rhythm, quieter than the grand gestures you'd expect, which turns out to be the whole point.
