A Michelin-starred restaurant in the middle of Sancerre wine country where the menu is almost entirely seafood, which takes a certain confidence when you're landlocked in the Loire Valley. The chef runs a single set menu with poetically named dishes, all fish and shellfish cooked with clear purpose. The wine list leans hard into Sancerre, as it should. The room is calm and uncluttered, and the service keeps pace with it.
