A stone farmhouse on the Causse de Limogne, where two former sommeliers came home from New Zealand and learned to butcher from the proprietress's father. The result is a meat-forward restaurant that runs nose to tail on local animals from the surrounding departments, smoked, grilled, simmered, or pressed into terrine. On Sundays the old bread oven fires up for a leg of lamb. The wine list runs to 200 labels, organic and biodynamic among them, and she knows every one.
