A former convent in the middle of Saint-Émilion wine country, now a two-Michelin-star dining room where Yannick Alléno oversees a kitchen rooted in Aquitaine terroir. The chef builds dishes around the southwest's produce, lifted by the kind of concentrated sauces that make you sit up straight. The local bottles, naturally, are very easy to find here.
