A tucked-away Spanish restaurant just off the Gran Vía where the kitchen follows the market rather than any particular trend. The menu leans into seasonal, recognizable ingredients without making a fuss about it, and the steak tartare has developed something of a reputation on the Madrid dining circuit. Fits the classic tasca template in feel, but the cooking has clearly been thought about. The kind of place locals keep quiet about, then mention anyway.
