The chalkboard menu changes daily at this small wine bar in Belleville, where Argentine-born, self-taught chef Raquel Carena has been cooking the kind of bistro French food that Paris chefs apparently eat on their nights off. She has a fondness for offal and fish, and a palate that runs tart and sweet-sour. The room is old Belleville bohemian, which in a rapidly gentrifying neighborhood means it is now doing double duty as a time capsule.

Pork snout terrine
“Dishes at this barebones bistro mostly revolve around offal, and are more creative and delicious than the next—pork snout terrine, crispy pig's ears, poached calf’s brain doused in lemon butter.”
