A Michelin Key hotel right on the water in Roscoff, with a low stone wall the only thing between the terrace and the beach. The building is an old merchant house, taken apart and rebuilt stone by stone, then joined to a boldly modern wing, and the 32 rooms sit somewhere between that history and the addition depending on which side you land. The spa and the setting do plenty, but the starred restaurant is the obvious pull.
