    Sitting on the Route des Grands Crus between Vougeot and Chambolle-Musigny, this fine dining restaurant occupies a classified château where Burgundy stone meets Corten steel and the wine list practically writes itself. The cooking is ingredient-led and precise, nodding to the region without leaning on it as a crutch. The room is elegant without being stiff, and the service knows when to appear and when to disappear.
