The estate's kitchen garden predates the restaurant, which tells you something about where the priorities lie. Two Australian chefs converted the former stables of a château outside Paris into a fine dining room where the harvest drives the menu, not the other way around. It landed on the World's 50 Best list, and the guestrooms mean you can sleep off the wine without negotiating the drive back to the city.
