    A Michelin three-star restaurant inside a Napoleon III mansion a short walk from the Champs-Élysées, where the dining room runs to Spanish gilt leather and Versailles parquet. Chef Jérôme Banctel builds tasting menus around his Breton roots and a restless curiosity about global technique, including a detour through Turkish limewater cooking that turns texture into its own argument. The sauces alone make the case for the whole enterprise.
