    The mullioned windows of what locals call the oldest building in Saint-Jean-de-Luz give little away from the street, but inside is a Michelin-starred restaurant where the chef turns Basque country produce into something precise and quietly ambitious. The cooking is rooted in the region but shaped by time at the Crillon and the George V, and that tension between terroir and technique is exactly what makes dinner here interesting.
