A 16th-century manor on Brittany's Rhuys Peninsula, where the old chapel is now your bedroom, complete with vaulted ceilings and exposed stone, and the brick cellar has become a spa. This boutique hotel keeps the original fireplace and a small lake out front where breakfast on the terrace doubles as birdwatching. It was an orphanage once, which the brochure handles diplomatically, but the conversion is quietly handsome.
