A one-Michelin-star restaurant in the Normandy forest, where the forest isn't just scenery but largely the menu. The chef forages the surrounding woodland seriously enough that Douglas pine ends up in the herbal tea, and his way with mushrooms, tricholoma, oyster, bearded hedgehog, has become a kind of signature obsession. Local camembert, nearby produce, and cooking workshops round out the picture. Elegant and quiet, with the trees very much invited inside.
