The dining room sits a few metres from the water, and that proximity is the whole premise: Gérald Passédat holds three Michelin stars and builds his fine dining menu almost entirely around what the Mediterranean gives up on any given day, over 65 species across the seasons. Sauces come from the heads and cooking juices; nothing gets wasted. The set menu devoted to his take on bouillabaisse is the move, and the sea view makes you feel like it ordered the food.
