L'Oursin

A one-Michelin-star restaurant inside a hotel perched above the port of Carry-le-Rouet, where the terrace looks out over the Frioul archipelago and the sea basically shows up on every plate too. The chef does a tight six- or eight-course menu that leans hard into seafood and vegetables, with the kind of quiet technical confidence that comes from time at Villa Madie. The room keeps a spare, coastal feel, which is either restraint or letting the view do the decorating.
