None of the fish here is frozen, and much of it comes from Pacific Northwest waters, which is a quiet rebuke to the global omakase circuit. LTD Edition is an eight-seat counter omakase tucked into Seattle's Capitol Hill, where the chef runs the room with the easy confidence of someone who spent years in nightlife before discovering sushi. The New York Times put it on their restaurant list, and the Dungeness crab alone makes the case.
