A chandelier namesake in Roppongi's basement, where the kitchen runs classical French technique through a Japanese filter. Kombu stock and fish sauce find their way into the sauces and essences, pulling umami from vegetables, seafood, and meat in ways Escoffier probably didn't anticipate. It's a proper sit-down French restaurant, but one where the dashi does quiet, persuasive work behind every dish.
