Six suites painted a deep vermillion red sit on 35 private acres between the Atlantic and the Uruguayan countryside, just outside José Ignacio. The lodge grows its own olives and keeps an organic garden, so dinner arrives with olive oil the kitchen pressed and wines poured by people who clearly mean it. Nordic tubs and outdoor showers under the pines round out the case for doing very little, very deliberately.
