Ginza-style bartending on the 16th floor of Causeway Bay, which means precise, minimal, unhurried. Madara is a Japanese craft-cocktail bar where the drinks pull from fresh fruit, tea, and, in at least one case, Shakespeare. The bartender behind Takumi Mixology Salon opened this, and the tea work is worth the visit on its own, bancha and mugi shochu turning quietly serious in the glass.
