A kappo restaurant in Shimogyo where the prix fixe menu is essentially a love letter to Nagasaki, written by a chef from the Goto Islands who moved to Kyoto and never stopped cooking like he was home. The fish arrives as sashimi and broth courses, and hatoshi, minced shrimp pressed between slices of fried toast, shows up like a happy anachronism. One Michelin star.
